I wanted to see how ramen noodles taste without any meat in it. The vegetable stock, soy sauce and lime based broth works wonders!

Ingredients
- 1 l (34 fl oz) of vegetable stock
- 1 tbsp miso paste
- 4 tbsp soy sauce
- juice of 1 lime
- 1 cm (half an inch) piece of ginger
- 1 tbsp honey
- 200 gr (7 oz) mushrooms
- 300 gr (11 oz) if your favorite noodles (I used rice noodles)
- 1 carrot
- 100 gr (3.5 oz) bean sprouts
- 2 spring onions
- sesame seeds
- dried seaweed
How to make it
- Mix grated ginger, miso paste, soy sauce, lime, honey and chopped mushrooms with the vegetable stock and boil for 5 minutes
- Meanwhile prepare the toppings: chop the spring onions, grate the carrot and rinse the bean sprouts. All these are served cold and fresh on top of the noodles and broth
- Boil the noodles as per instructions on the package. Mix noodles and broth on serving plates and add the toppings, sesame seeds and seaweed. You’re good to go
