A good pad thai is one of my favorites, I’m happy it can easily be made all vegan as well. The whole wheat noodles taste a bit different than standard noodles but contain more nutrients.
Style: vegan. Taste: 85/100. Serves 4-5. Inspired by the pad thai recipe in The World of the Happy Pear.
Ingredients
- 2 onions or 3 shallots
- 2 cloves of garlic
- 2 cm (1 inch) piece of fresh ginger
- 2 paprikas
- 100 gr (4 oz) mushrooms
- 200 gr (7 oz) bok choy (or other Chinese cabbage)
- 200 gr (7 oz) snow peas or sugar snaps
- 200 ml (7 fl oz) coconut milk
- 5 tbsp tamari or soy sauce
- 2 tbsp honey
- juice of 1 lime
- 250 gr (9 oz) noodles (whole wheat)
- cashew nuts
How to make it
Use a deep pan for this dish since in the end all ingredients will be mixed together.
- Fry the chopped onion, garlic, paprika and grated ginger in a pan for 4-5 minutes
- Boil the noodles according to the instruction on the package, drain them and put aside
- Make the sauce by mixing the coconut milk, soy sauce, honey and lime juice
- Add the chopped mushrooms and a bit of the sauce to the pan and fry for 3-4 minutes more
- Then add the snow peas, chopped bok choy and noodles to the pan together with the rest of the sauce and cook the mix for a few minutes
- Serve with some cashew nuts on top
