This simple recipe creates a very tasty mix of fresh veggies, soy sauce and lime. Cashew nuts finish it off giving a good deal of bite. Definitely no meat needed.

Ingredients
- 250 gr (9 oz) rice
- 2 onions
- 3 cloves of garlic
- 2cm (1 inch) of fresh ginger
- 1 courgette
- 150 gr (5 oz) sugar snaps
- 4 spring onions
- 3 tbsp soy sauce
- 1 lime
- 50 gr (2 oz) cashew nuts
- oil for cooking
How to make it
- Boil the rice according to the instruction on the package
- Chop the courgette, onions and spring onions to the size you like. Add some oil to a frying pan, then stir fry the courgette, onions, spring onions and sugar snaps on high heat for 2-3 minutes
- Add chopped garlic and grated ginger and stir fry for 1-2 minutes more
- Remove from heat and add soy sauce and boiled rice, then squeeze the lime on top. Mix well, check for taste and add more soy sauce if you like
- Serve with cashew nuts on top, delicious!
