This is the best dish I made in a while. It’s so creamy and crisp and healthy.
Actually this was an accident as I just had to get rid of all my veg.
Layers of potatoes, spinach and onions, kale and onions, all drowned in cashew cheese.
I used half almond milk and half water for the ‘cheese’.
I am not kidding … super yummieness!!!
I checked how long this took me to make for lunch.
10 minutes …
Cook water and heat a pan with a bit of olive oil while chopping:
1 onion, 1 carrot, 1 courgette, kale
Put soba noodles in pot for 5 minutes while veg is hanging out in the pan.
Then throw the noodles in the pan, sprinkle with soy sauce, mix and done!
This is nearly as quick as a bagel and I am finally getting the hang of kale. It’s about time!
