Chilli con veg

Anything goes in this one. Love it because I have most of the time all the ingredients at hand and can freeze it well. Can be eaten with potatoes, bread, rice or solo.

One pot only a bit of onion choppin and  over an hour and a whole lot of stirring later:


Top secret ingredient to make it bling in your mouth is balsamic vinegar.

Must have: onion and olive oil, tomato paste and chopped tomatoes.

Spices: cinnamon, oregano, chilli, garlic, pepper, coriander.

Other stuff that might end up in there: green and red lentils for protein, canelli, kidney and black beans, frozen veg like corn and if I am keen on more chopping, carrots for sweetness.
