Roast potatoes

This recipe was included in our Christmas veg box scheme by and we tested it with some changes. These are the most gorgeous roast potatoes we’ve ever eaten.

Here are the highlights:

Pre-heat oven to 180 degree.

Peel, cut in halves, wash for 5 minutes (removes the starch).

Put in pot covered with water, bring to boil, simmer until smooth (~5-10 minutes after boiling).

Let it cool.

Put a pan with half a centimetre olive oil in the oven and wait until it is super hot. Put in the potatoes together with sea salt and fresh rosemary.

Wait for 1 hour.

Then be naughty and eat them with yam 😀 (yeah I know how that sounds, but try it and report back, cranberry or blackberry worked well for me).

I also tried them with oregano as main spice which was fabulous as well. Now I just need more of those potatoes!
